Chicken Marinade

Method

Marinate the Chicken

  1. 1

    Prepare the Marinade

In a large mixing bowl, combine soy sauce, gochujang, honey, sesame oil, minced garlic, and grated ginger. Mix well until all ingredients are fully blended.

  2. 2

    Marinate the Chicken

Add the boneless chicken thighs to the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor.

Cook the Chicken

  1. 3

    Grill or Pan-Fry the Chicken

Heat a grill or skillet over medium-high heat. Once hot, remove the chicken from the marinade, allowing excess marinade to drip off. Cook the chicken for 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

  2. 4

    Slice the Chicken

Once cooked, remove the chicken from heat and let it rest for a few minutes. Then slice the chicken into bite-sized pieces.

Assemble the Tacos

  1. 5

    Prepare the Tortillas

Warm the taco-sized corn tortillas on a skillet for about 30 seconds on each side until soft and pliable.

  2. 6

    Build the Tacos

On each tortilla, layer shredded cabbage, julienned carrots, sliced chicken, and chopped cilantro. Top with a dollop of sour cream or Greek yogurt.

  3. 7

    Serve

Serve immediately with lime wedges on the side for squeezing over the tacos.
