Pickling Okra

    Prepare the Brine

    In a saucepan, combine white vinegar, water, salt, garlic cloves, dill weed, cayenne pepper, and black peppercorns. Bring to a boil, stirring until salt is dissolved.

    Pickle the Okra

    Place the okra in a clean jar and pour the hot brine over the okra, ensuring it is fully submerged. Seal the jar and let it cool to room temperature before refrigerating for at least 24 hours.

Battering

    Prepare the Batter

    In a mixing bowl, combine all-purpose flour, cornmeal, salt, and cayenne pepper. In another bowl, whisk together the eggs and milk.

    Coat the Okra

    After the okra has been pickled, remove it from the jar and slice it into bite-sized pieces. Dip each piece into the egg mixture, then coat with the flour and cornmeal mixture. Set aside.

Making Ranchonnaise

    Combine Ingredients

    In a bowl, mix together mayonnaise, buttermilk, garlic powder, dried dill, and salt. Adjust seasoning to taste and refrigerate until ready to serve.

Frying

    Heat Oil

    In a deep skillet or fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Okra

    Carefully add the battered okra pieces to the hot oil in small batches. Fry until golden brown and crispy, about 3-4 minutes per batch. Remove with a slotted spoon and drain on paper towels.
