Bun Preparation

Activate the Yeast
In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until it becomes frothy.

Mix the Dough
In a large mixing bowl, combine Freemason spent grain flour and salt. Make a well in the center and add the activated yeast mixture and olive oil. Stir until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 10 minutes until smooth and elastic.

Let it Rise
Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Shape the Buns
After rising, punch down the dough and divide it into 4 equal portions. Shape each portion into a bun and place them on a baking sheet lined with parchment paper.

Second Rise
Cover the shaped buns with a cloth and let them rise for another 30 minutes.

Bake the Buns
Preheat the oven to 375°F (190°C). Bake the buns for 15-20 minutes until golden brown. Remove from the oven and let them cool.

Assemble the Burger
Slice the toasted Freemason buns in half. Place a slice of American cheese on the bottom half of each bun, add the sautéed onions on top, and cover with the top half of the bun.
