    Prepare Tortilla Chips

    Place the tortilla chips in a large serving bowl and set aside.

Poblano Beer Cheese Sauce

    Roast Poblano Peppers

    Preheat your oven to 400°F (200°C). Place the poblano peppers on a baking sheet and roast for about 20-25 minutes, turning occasionally, until the skin is blistered and charred. Remove from the oven and let cool. Once cooled, peel off the skin, remove the seeds, and chop the peppers.

    Make the Roux

    In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the all-purpose flour and cook for 1-2 minutes until it turns a light golden color.

    Add Liquids

    Slowly pour in the milk and beer while whisking continuously to avoid lumps. Bring the mixture to a simmer until it thickens.

    Add Cheeses and Seasoning

    Reduce the heat to low, then add the cheddar cheese, cream cheese, garlic powder, onion powder, salt, and pepper. Stir until the cheeses are completely melted and the sauce is smooth. Finally, fold in the chopped roasted poblano peppers.

    Prepare the Salsa

    Dice the tomatoes and red onion finely. In a bowl, combine the diced tomatoes, red onion, chopped cilantro, lime juice, and salt. If using, finely chop the jalapeño and add it to the mixture. Stir everything together until well combined. Adjust seasoning as needed.
