Method

Winemaking Process

  1. 1

    Harvesting

Harvest the Pinot Grigio grapes at their peak ripeness, typically in late summer to early fall.

  2. 2

    Crushing and Pressing

Crush the harvested grapes gently to extract the juice and then press the crushed grapes to separate the juice from the skins.

  3. 3

    Fermentation

Transfer the juice to fermentation tanks and add yeast. Allow it to ferment at controlled temperatures (12-18°C) for about 2 weeks.

  4. 4

    Clarification

Once fermentation is complete, clarify the wine by racking it off the sediment into clean tanks.

  5. 5

    Aging

Age the wine in stainless steel tanks for several months to develop its flavors without the influence of oak.

  6. 6

    Filtration and Bottling

Filter the wine to remove any remaining solids and bottle it under sterile conditions.
