    Prepare the Black Garlic Mash

    Peel and boil the potatoes in salted water until tender. Drain and return to the pot. Add black garlic and a bit of olive oil, then mash until smooth. Season with salt and pepper to taste.

    Cook the NY Strip Steak

    Season the NY strip steak with salt and black pepper. Heat a skillet over medium-high heat and add a little olive oil. Cook the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness.

    Sauté the Summer Squash

    While the steak is cooking, slice the summer squash and sauté it in a separate pan with a drizzle of olive oil until tender, about 3-4 minutes. Season with salt and pepper.

    Make the Chimichurri Sauce

    In a small bowl, combine chopped parsley, minced garlic, red wine vinegar, olive oil, and red pepper flakes. Mix well and adjust seasoning with salt and pepper.

    Plate the Dish

    On each plate, serve a portion of black garlic mash, top with the NY strip steak, and arrange sautéed summer squash on the side. Drizzle chimichurri sauce over the steak.
