Method

Preparing the Octopus

    Cook the Octopus

    In a large pot, bring salted water to a boil. Add the octopus and simmer for 45-60 minutes until tender. Remove from water and let cool.

    Marinate

    Once cooled, cut the octopus into tentacles. In a bowl, mix olive oil, minced garlic, lemon juice, smoked paprika, salt, and pepper. Add octopus and let marinate for at least 30 minutes.

Making the Nduja Vinaigrette

    Mix the Vinaigrette

    In a small bowl, whisk together nduja, red wine vinegar, olive oil, salt, and black pepper until well combined.

Cooking and Serving

    Grill the Octopus

    Preheat the grill to medium-high heat. Grill octopus for 3-5 minutes per side until charred and slightly crispy.

    Cook the Potatoes

    Boil baby potatoes in salted water until tender, about 15-20 minutes. Drain and toss with nduja vinaigrette.

    Serve

    On a plate, arrange arugula, top with grilled octopus, add potatoes, and garnish with pickled peppers. Serve with lemon wedges on the side.
