Wine Making Process
- 1
Harvest the Grapes
Harvest the Cabernet Sauvignon grapes when they reach optimal ripeness, usually between late September and early October.
- 2
Crush and Destem
Remove the stems from the grapes and crush them to release the juice.
- 3
Fermentation
Transfer the crushed grapes to a fermentation vessel. Add yeast and sulfites, then mix thoroughly. Allow the mixture to ferment at a controlled temperature for 1-2 weeks.
- 4
Pressing
Once fermentation is complete, press the mixture to separate the wine from the solids.
- 5
Maturation
Transfer the wine to a clean fermentation vessel or barrel. If using, add oak chips to enhance flavor. Allow the wine to mature for 6 months to 1 year.
- 6
Bottling
Once matured, bottle the wine in sanitized bottles and cork them. Store in a cool, dark place.
