Prepare the Brussel Sprouts
Trim the ends of the brussel sprouts and remove any yellow leaves. Cut them in half lengthwise.

Cook the Pancetta
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the smoked pancetta and cook until crispy, about 5-7 minutes. Remove from the skillet and set aside.

Fry the Brussel Sprouts
In the same skillet, add the remaining tablespoon of olive oil. Increase the heat to medium-high and add the halved brussel sprouts cut-side down. Season with salt and pepper. Cook for about 5-6 minutes until the cut sides are golden brown. Stir and cook for an additional 3-4 minutes until tender.

Add Hazelnuts and Herbs
Once the brussel sprouts are cooked, add the hazelnuts and cooked pancetta back to the skillet. Toss in the fresh herbs and cook for 1-2 minutes until everything is heated through.

Serve
Transfer the fried brussel sprouts to a serving dish and drizzle with pomegranate gastrique if desired. Serve warm.
