Preparation and Cooking

    Prepare the Artichoke Hearts

    If using canned artichoke hearts, drain and pat them dry. If using frozen, thaw and pat dry.

    Set up the Breading Station

    In one bowl, place the flour mixed with salt and pepper. In a second bowl, whisk the eggs. In a third bowl, mix panko breadcrumbs and grated Parmesan cheese.

    Bread the Artichoke Hearts

    Dredge each artichoke heart in the flour, then dip it in the egg, and finally coat it with the panko and Parmesan mixture.

    Fry the Artichoke Hearts

    In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the breaded artichoke hearts in batches, frying until golden brown and crispy, about 3-4 minutes per side.

    Drain and Toss

    Remove the fried artichoke hearts from the oil and drain on paper towels. While they are still warm, toss them with chopped mint and parsley.
