Preparation and Assembly

    Prepare the Potatoes

    Wash and cut marble potatoes into thick fries. Blanch them in boiling water for about 5 minutes, then drain and let cool.

    Cook the Bacon and Bratwurst

    In a skillet, cook the bacon until crispy. Remove and set aside. In the same skillet, cook bratwurst until browned and cooked through. Slice into bite-sized pieces.

    Make the White Cheese Sauce

    In a saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes. Gradually whisk in milk until smooth. Add shredded cheese, salt, and pepper. Stir until cheese is melted and sauce is creamy.

    Fry the Potatoes

    In a deep fryer or large pot, heat oil to 350°F (175°C). Fry the blanched marble potatoes until golden brown and crispy, about 5-7 minutes. Drain on paper towels.

    Assemble the Fries

    On a serving plate, place a generous amount of crispy fries. Top with bratwurst, crumbled bacon, pickled jalapeños, and drizzle with white cheese sauce. Finish with a dollop of whole grain mustard crème.
