Method

Chicken Tinga Preparation

    Cook the Chicken

    In a large skillet over medium heat, add 2 tablespoons of olive oil. When hot, add the chicken thighs and cook until browned on both sides, about 5-7 minutes. Remove the chicken and set aside.

    Sauté Onions and Garlic

    In the same skillet, add the chopped onion and cook until translucent, about 4 minutes. Add minced garlic and sauté for an additional 1-2 minutes until fragrant.

    Add Tomatoes and Spices

    Stir in the chopped chipotle peppers, diced tomatoes, chicken broth, salt, and black pepper. Bring the mixture to a simmer.

    Simmer the Chicken

    Return the chicken to the skillet. Cover and simmer on low heat for about 25-30 minutes, or until the chicken is fully cooked and tender.

    Shred the Chicken

    Remove the chicken from the skillet and shred it using two forks. Return the shredded chicken to the skillet and stir to combine with the sauce. Cook for an additional 5 minutes.

Taco Assembly

    Warm the Tortillas

    In a separate skillet, warm the flour tortillas over medium heat for about 30 seconds on each side, or until pliable.

    Assemble the Tacos

    On each tortilla, add a generous amount of the chicken tinga mixture. Top with crumbled queso fresco, sliced jalapeños, roasted poblano, and a drizzle of crema or sour cream.

    Serve immediately while warm, allowing everyone to customize their tacos with additional toppings as desired.
