Meat Preparation

    Marinate the Steak

    In a bowl, mix the olive oil, salt, and black pepper. Coat the flank steak with the marinade and let it sit for at least 30 minutes at room temperature.

    Cook the Steak

    Preheat a grill or skillet over medium-high heat. Cook the marinated flank steak for 5-7 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let it rest for 5 minutes before slicing.

Vegetable Preparation

    Prepare the Nopales

    Clean the nopales by removing the thorns and rinsing under cold water. Cut them into strips and boil in salted water for about 10 minutes until tender. Drain and set aside.

    Sauté the Onion

    Peel and slice the onion into thin rings. In a skillet, sauté the onion over medium heat with a little oil until translucent and slightly caramelized, about 5-7 minutes.

    Chop the Cilantro

    Rinse the cilantro thoroughly and chop finely. Set aside for topping the tacos.

Salsa Preparation

    In a blender, combine the chipotle peppers, tomatoes, garlic, and lime juice. Blend until smooth. Adjust seasoning to taste and set aside.

Guacamole Preparation

    In a bowl, mash the avocados with a fork. Mix in the lime juice and salt until well combined. Adjust seasoning to taste.

Assembling the Tacos

    Assemble the Tacos

    Warm the flour tortillas in a skillet or microwave. Layer sliced steak, nopales, sautéed onions, and chopped cilantro onto each tortilla. Top with salsa and a dollop of guacamole.

    Serve the tacos immediately while warm, with any remaining salsa and guacamole on the side.
