Filling Preparation

    Cook the Potatoes

    Peel and dice the potatoes into small cubes. Boil them in salted water for about 15 minutes or until tender. Drain and mash them in a bowl.

    Cook the Bacon

    In a skillet over medium heat, cook the applewood smoked bacon until crispy. Remove from skillet, chop into small pieces, and set aside.

    Prepare the Eggs

    In the same skillet, scramble the eggs until fully cooked. Season with salt and black pepper.

    Combine the Filling

    In the bowl with the mashed potatoes, add the scrambled eggs and chopped bacon. Mix well until all ingredients are combined.

Assembling the Flautas

    Fill the Tortillas

    Take a corn tortilla and place about 2 tablespoons of the filling near one edge. Roll the tortilla tightly around the filling, securing it with a toothpick if needed. Repeat with remaining tortillas and filling.
