Flautas Preparation

    Prepare the Potatoes

    Peel and chop the potatoes into small cubes. Boil them in salted water until tender, about 15-20 minutes. Drain and mash until smooth.

    Cook the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove from the skillet and chop into small pieces.

    Mix the Filling

    In a bowl, combine the mashed potatoes, chopped bacon, and aged cheddar cheese. Mix well until combined.

    Assemble the Flautas

    Take a corn tortilla, place a spoonful of the potato mixture on one end, and roll tightly. Repeat with the remaining tortillas and filling.

    Fry the Flautas

    Heat oil in a deep skillet over medium heat. Fry the flautas in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.

    Serve the crispy flautas hot with a generous drizzle of crema on top.

Pico de Gallo Preparation

    Dice the tomatoes and onion into small pieces. Finely chop the cilantro.

    In a bowl, combine the diced tomatoes, onion, cilantro, lime juice, and salt. Stir well to combine.
