    Soak the Beans

    Rinse the dried black beans under cold water to remove any debris. Place the beans in a large bowl and cover them with water. Let them soak overnight, or for at least 6-8 hours.

    Cook the Beans

    After soaking, drain and rinse the beans again. In a large pot, combine the soaked beans and 4 cups of fresh water. Bring to a boil, then reduce the heat to low. Cover and simmer for about 1-1.5 hours, or until the beans are tender.

    Sauté Aromatics

    In a separate skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5-7 minutes. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

    Season the Beans

    Once the beans are cooked and tender, stir in the sautéed onion and garlic mixture. Add cumin, salt, black pepper, and chili powder. Mix well and let it simmer for another 10-15 minutes to allow the flavors to meld.

    Remove the pot from heat. Stir in the chopped cilantro and freshly squeezed lime juice. Adjust seasoning with more salt or pepper if needed.
