In a large mixing bowl, combine the masa harina and salt. Mix well to ensure the salt is evenly distributed.

Add Water
Slowly add the water to the masa harina mixture, stirring with your hands or a wooden spoon until the dough begins to come together. If using oil, add it with the water.

Knead the Dough
Once the dough has come together, knead it in the bowl for about 2-3 minutes until it is smooth and elastic. If the dough feels too dry, add a little more water, one tablespoon at a time, until the desired consistency is reached.

Cover the bowl with a damp cloth and let the dough rest for at least 30 minutes. This allows the masa harina to fully hydrate.

Shape the Tortillas
Divide the dough into equal portions, usually about 10-12 balls, depending on the size of tortillas you want. Roll each ball into a smooth sphere.

Using a tortilla press or a rolling pin, flatten each ball between two pieces of plastic wrap or parchment paper to prevent sticking. Aim for a thickness of about 1/8 inch.
