Make the Chorizo
In a large mixing bowl, combine the ground pork, paprika, cumin, garlic powder, chili powder, salt, and black pepper. Mix well until all the spices are evenly distributed throughout the meat.

Scramble the Eggs
In a large bowl, beat the eggs. In a skillet, melt butter over medium heat and add chopped shallots. Sauté until translucent, about 2-3 minutes. Pour in the beaten eggs and cook, stirring gently until scrambled to your desired consistency. Mix in the cooked potatoes and stir until combined.

Assemble the Burritos
Lay out each flour tortilla on a flat surface. In the center of each tortilla, add a generous amount of the chorizo, scrambled eggs with potatoes, shredded aged cheddar, pico de gallo, sweet grilled corn, and a drizzle of chipotle aioli.

Wrap the Burritos
Fold the sides of the tortilla inwards, then roll it up from the bottom to enclose the filling. Ensure it's tightly wrapped.

Serve
Sprinkle crumbled queso fresco and Tajín seasoning on top of the burritos. Serve immediately, or grill for an additional 2-3 minutes on each side for a crispy finish.
