Preparation of Chips

    Prepare Tortilla Chips

    If you are using store-bought tortilla chips, skip this step. If you are making your own, cut corn tortillas into triangles and fry in hot oil until golden and crispy. Drain on paper towels and set aside.

Preparation of Green Sauce

    Make Salsa Verde

    In a saucepan, add tomatillos, garlic, jalapeño, and salt. Cover with water and bring to a boil. Reduce heat and simmer for about 10 minutes until tomatillos are tender. Drain and blend with fresh cilantro and lime juice until smooth. Adjust seasoning if necessary.

Preparation of Red Sauce

    Make Salsa Roja

    In a saucepan, add Roma tomatoes, onion, garlic, and salt. Cook over medium heat until tomatoes break down. Blend with chipotle peppers and cumin until smooth. Adjust seasoning if necessary.

Assembly

    Assemble Chilaquiles

    In a large serving dish, layer the tortilla chips. Pour the salsa verde over half of the chips and salsa roja over the other half. Sprinkle with shredded queijo Oaxaca and drizzle with crema. Top with sliced avocado and radishes if desired.
