Method

Prepare Lobster Filling

    Cook Lobster

    If using live lobster, boil for about 8-10 minutes until the shells turn bright red. Remove from the water, let cool, then extract the meat and chop into bite-sized pieces.

    Mix Ingredients

    In a mixing bowl, combine the chopped lobster meat, lemon juice, celery, red onion, mayonnaise, salt, black pepper, and chives. Stir gently to combine.

Make Lemon Aioli

    Combine Ingredients

    In a small bowl, whisk together the mayonnaise, minced garlic, lemon juice, salt, and black pepper until smooth and well mixed.

Prepare Brioche Rolls

    Toast Rolls

    Spread softened butter on the inside of each brioche roll. Heat a skillet over medium heat and toast the rolls, buttered side down, until golden brown.

Assemble Lobster Rolls

    Fill Rolls

    Spoon the lobster filling into each toasted brioche roll generously.

    Top with Aioli

    Drizzle the lemon aioli over the filled lobster rolls.
