    Prepare the Brisket

    Preheat your oven to 300°F (150°C). Season the brisket with salt and black pepper. Place it in a roasting pan and cover it with aluminum foil. Roast for about 3 hours until tender. Let it cool, then chop into small pieces.

    Make the Bourbon Glaze

    In a saucepan, combine bourbon, honey, and soy sauce. Bring to a simmer over medium heat, stirring occasionally until the mixture thickens (about 10 minutes). Set aside.

    Cook the Potatoes

    Heat olive oil in a large skillet over medium heat. Add the diced potatoes, season with salt and black pepper. Cook for about 15-20 minutes until golden brown and crispy, stirring occasionally.

    Cook the Eggs

    In a separate pan, cook the eggs to your liking (scrambled, fried, or poached).

    Combine and Serve

    In the skillet with potatoes, add the chopped brisket and the bourbon glaze. Stir to combine and heat through. Serve the hash topped with the eggs and garnish with chopped chives.
