Prepare the Apples
Wash, core, and chop the fresh apples into small pieces.

Juicing
In a large pot, combine the chopped apples and water. Bring to a boil and then reduce to a simmer. Cook for about 30 minutes until the apples are soft. Mash the apples to extract the juice.

Strain the Juice
Strain the apple mixture through a fine mesh sieve or cheesecloth into a clean container to separate the juice from the pulp.

Combine Ingredients
In a fermentation vessel, mix the strained apple juice with granulated sugar, lemon juice, cinnamon sticks, cloves, and yeast.

Fermentation
Cover the fermentation vessel with a cloth and let it sit at room temperature for 1-2 weeks, stirring daily. Taste regularly to check on the fermentation process.

Bottling
Once fermentation is complete, transfer the cider into clean bottles, leaving some space at the top. Seal with caps.

Chill and Enjoy
Refrigerate the bottles for at least 24 hours before serving. Serve chilled and enjoy your homemade cider!
