    Prepare the Brisket

    Preheat your oven to 300°F (150°C). Rub the brisket with olive oil, salt, black pepper, chili powder, and cumin. Place it in a roasting pan and cover with foil. Roast for about 3 hours or until tender.

    Cook the Vegetables

    In a large pot, heat 2 tablespoons of olive oil over medium heat. Add chopped onion, bell pepper, and minced garlic. Sauté until softened, about 5-7 minutes.

    Combine Ingredients

    Once the brisket is done, shred it and add it to the pot with the sautéed vegetables. Mix in black beans, tomato sauce, beef broth, bay leaf, and bring to a simmer.

    Simmer the Chili

    Let the chili simmer on low heat for 30-45 minutes, stirring occasionally. Adjust seasoning with salt and pepper as needed.

    Prepare Candied Bacon

    In a skillet, cook the bacon until crispy, then sprinkle with brown sugar and continue cooking until caramelized. Chop into pieces.

    Remove the bay leaf from the chili. Serve hot, garnished with candied bacon.
