    Prepare the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Stir in the grits and a pinch of salt. Reduce heat to low and simmer for about 20-25 minutes, stirring occasionally, until thickened. Stir in the cheddar cheese until melted and smooth. Remove from heat and set aside.

    Cook the Bacon

    In a large skillet, cook the diced bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the bacon grease in the pan.

    Sauté Vegetables

    In the same skillet, add olive oil if needed and heat over medium heat. Add the diced onions and red bell pepper. Sauté until the onions are translucent and the peppers are tender, about 5-7 minutes.

    Cook the Shrimp

    Sprinkle the shrimp with blackening seasoning. Push the vegetables to one side of the skillet and add the shrimp to the other side. Cook for about 2-3 minutes per side, or until the shrimp are cooked through and opaque.

    Combine and Serve

    Add the cooked bacon back into the skillet with the shrimp and vegetables. Mix everything together and season with salt and black pepper to taste. Serve the shrimp mixture over a bed of cheddar grits and garnish with chopped green onions.
