Prepare the Rockfish
1. Marinate the rockfish fillets in buttermilk for at least 30 minutes.

Fry the Fish
3. Heat vegetable oil in a large skillet over medium-high heat. Fry the coated rockfish fillets for about 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Make the Cheddar Polenta
4. In a pot, bring chicken broth to a boil. Gradually whisk in polenta, stirring constantly. Reduce heat and cook for about 20-25 minutes until thickened.

Finish the Polenta
5. Stir in cheddar cheese, butter, salt, and pepper until smooth and creamy.

Serve
6. Serve the fried rockfish over a bed of cheddar polenta.
