Prepare the Pork Belly
Preheat your oven to 300°F (150°C). Season the pork belly with salt and pepper, then place it on a baking sheet. Bake for 2-3 hours until tender. Once done, let it cool slightly, then chop into small cubes.

Cook the Macaroni
In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce
In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute. Gradually add the heavy cream, whisking constantly. Once the mixture is smooth and thickened, reduce heat and stir in the smoked gouda, cheddar cheese, garlic powder, onion powder, paprika, salt, and black pepper until fully melted and combined.

Combine Everything
In a large mixing bowl, combine the cooked macaroni, cheese sauce, and chopped pork belly. Mix well to ensure everything is coated in the cheese sauce.

Bake
Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture to a baking dish. Bake for 20-25 minutes until bubbly and golden on top.

Remove from the oven, let it cool for a few minutes, then garnish with fresh parsley before serving.
