Prepare the Chicken
Season the chicken breasts with olive oil, salt, and black pepper. Grill them over medium heat for about 6-7 minutes on each side, or until fully cooked and juices run clear.

Make the Tomato Topping
Dice the fresh tomatoes and combine them with chopped fresh basil and a drizzle of olive oil. Set aside.

Sauté the Spinach
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add the fresh spinach, season with salt and pepper, and cook until wilted, about 2-3 minutes.

Assemble the Bruschetta
Once the chicken is cooked, place each breast on a serving plate. Top each chicken breast with sautéed spinach, then layer with diced tomato mixture. Finish with a slice of provolone cheese on top.

Drizzle balsamic glaze over the assembled bruschetta and serve immediately while warm.
