Prep the Chicken
In a bowl, combine buttermilk, eggs, salt, and black pepper. Add chicken thighs and marinate for at least 1 hour (or overnight in the fridge for best results).

Prepare the Waffle Batter
In a separate bowl, mix waffle mix according to package instructions. Set aside.

Fry the Chicken
In the same skillet, heat oil to 350°F (175°C). Remove chicken from marinade, coat in flour, and fry until golden brown and cooked through (about 6-8 minutes per side).

Make the Waffles
In a waffle maker, pour in the prepared waffle batter and cook according to the manufacturer's instructions.

Prepare Bourbon Maple Syrup
In a small saucepan, combine maple syrup and bourbon, warming over low heat until heated through. Mix well.

Assemble and Serve
Place a waffle on a plate, top with fried chicken, drizzle with bourbon maple syrup, and garnish with crumbled bacon. Serve with whipped cream if desired.
