    Prepare the Brunch Potatoes

    Dice the potatoes into small cubes. In a large skillet, heat the olive oil over medium heat. Add the potatoes, paprika, salt, and black pepper, and sauté until the potatoes are golden and tender, about 15-20 minutes. Stir occasionally. Once done, garnish with fresh parsley and set aside.

    Cook the Bacon

    In the same skillet, cook the bacon until crispy. Remove from the skillet and place on a paper towel to drain excess fat.

    Cook the Beef Patties

    Form the ground beef into two equal patties, season with salt and pepper. In the skillet with bacon grease, cook the patties over medium-high heat for about 4-5 minutes on each side or until desired doneness. Add a slice of smoked gouda on top of each patty during the last minute of cooking to melt.

    Fry the Eggs

    In another skillet, fry the eggs to your liking (sunny-side up, over easy, etc.).

    Assemble the Burger

    Toast the brioche buns on the skillet until golden. Spread garlic aioli on the bottom half of each bun. Place the beef patty with melted gouda cheese on top, followed by a slice of bacon and the fried egg. Top with the other half of the bun.

    Serve

    Serve the Brunch Burgers immediately with a side of the brunch potatoes.
