Prepare the Risotto
In a medium saucepan, heat the chicken broth over medium heat. In a separate pot, melt 1 tablespoon of butter over medium heat. Add the arborio rice and toast for about 2 minutes, stirring frequently.

Cook the Risotto
Gradually add the warm chicken broth to the rice, one ladle at a time, stirring constantly until the liquid is absorbed before adding more. This usually takes about 18-20 minutes. Once the rice is creamy and al dente, stir in the remaining butter and parmesan cheese. Season with salt and pepper to taste.

Prepare the Salmon
Pat the salmon fillets dry with paper towels and rub them with olive oil. Generously coat each fillet with blackening seasoning on both sides.

Cook the Salmon
Heat a cast-iron skillet over high heat. Once hot, add the salmon fillets skin-side down and cook for about 3-4 minutes until the skin is crispy. Flip the fillets and cook for another 3-4 minutes on the other side.

Make the Ginger Honey Glaze
In a small bowl, mix together the honey and grated ginger. Once the salmon is cooked, brush the ginger honey glaze over the fillets and let it caramelize for about 1-2 minutes on the skillet.
