Prepare the Bourbon BBQ Brisket

Cook the Brisket
Preheat your oven to 300°F (150°C). Season the brisket with salt, black pepper, garlic powder, and onion powder. Place the brisket in a roasting pan and pour the bourbon and BBQ sauce over it. Cover with foil and roast for 3-4 hours, until tender. Shred the brisket and mix it with the remaining BBQ sauce.
Assemble the Nachos

Layer the Nachos
On a large baking sheet, spread half of the tortilla chips. Top with half of the shredded bourbon BBQ brisket, half of the pepper jack cheese, and half of the pickled red onions. Repeat the layers with the remaining ingredients.

Melt the Cheese
Place the baking sheet in the oven and broil on high for about 3-5 minutes, or until the cheese is melted and bubbly. Keep a close eye to prevent burning.

Drizzle with Aioli
Remove from the oven and drizzle the roasted pepper aioli over the nachos. Serve immediately.
