Prepare the Shrimp
In a large bowl, mix the flour and Cajun seasoning. In another bowl, beat the egg. In a third bowl, place the panko breadcrumbs. Dip each shrimp first in the flour mixture, then in the egg, and finally coat with panko breadcrumbs.

Fry the Shrimp
Heat oil in a large skillet over medium-high heat. Once hot, fry the breaded shrimp in batches until golden brown and cooked through, about 2-3 minutes per side. Remove and drain on paper towels.

Make the Bang Bang Sauce
In a small bowl, combine mayonnaise and Sriracha sauce. Adjust the amount of Sriracha to taste.

Assemble the Po Boy
Slice the Amoroso rolls in half. Spread the Bang Bang sauce on both sides of the roll. Layer with shredded romaine lettuce, fried shrimp, and top with pico de gallo.
