Preheat your wood-fired oven to about 450°F (232°C). Wash the Russet potatoes thoroughly under cold water to remove any dirt. Pat them dry with a clean towel.

Using a sharp knife, cut each potato into wedges. Aim for 6-8 wedges per potato, depending on size. Place the wedges in a large bowl.

Drizzle the olive oil over the potato wedges. Add sea salt, black pepper, garlic powder, smoked paprika, and fresh rosemary to the bowl. Toss the wedges until they are evenly coated with the oil and seasonings.

Ensure the wood-fired oven is fully heated and that there is a good bed of hot coals. If using a pizza stone, place it in the oven before heating.
