Preparation of Eaux de Vie

    Selection of Eaux de Vie

    Select up to 1,200 ml of high-quality eaux de vie from the Grande Champagne region. Ensure a rich and diverse blend that captures the essence of the terroir.

    Dilution

    Add 500 ml of distilled water to the selected eaux de vie to adjust the alcohol content. Stir gently to combine.

Flavor Infusion

    Infusing Flavors

    Slice the vanilla beans lengthwise and add them to the eaux de vie mixture, alongside the dried figs and honey. Stir well to ensure even distribution of flavors.

    Let it Rest

    Cover the mixture and let it rest at room temperature for 24 hours to allow the flavors to meld together.

Aging Process

    Transfer to Barrels

    Pour the infused mixture into three French oak barrels. Seal them tightly to prevent evaporation.

    Aging Time

    Allow the mixture to age in the barrels for a minimum of 10 to 20 years. Monitor the aging process periodically to assess flavor development.
