French Onion Soup Recipe

    Prepare the Onions

    Peel and thinly slice the yellow onions.

    Sauté the Onions

    In a large pot, melt the unsalted butter and olive oil over medium heat. Add the sliced onions to the pot and stir to coat them in the butter. Cook, stirring occasionally, for about 30-40 minutes until the onions are caramelized and golden brown.

    Add Garlic

    Add the minced garlic to the pot and cook for an additional 2 minutes until fragrant.

    Deglaze with Wine

    Pour in the dry white wine and scrape the bottom of the pot to deglaze, cooking for about 5 minutes until the wine reduces slightly.

    Add Broth and Seasonings

    Add the beef broth, fresh thyme, bay leaf, salt, and black pepper to the pot. Bring the mixture to a simmer and let it cook for another 20-30 minutes.

    Prepare the Baguette

    While the soup is simmering, preheat your oven to 350°F (175°C). Slice the baguette into 1-inch thick slices and place them on a baking sheet. Toast in the oven for about 10 minutes until golden brown.

    Serve the Soup

    Remove the bay leaf from the soup. Ladle the hot soup into oven-safe bowls, placing one or two toasted baguette slices on top of each bowl.

    Add Cheese and Broil

    Sprinkle a generous amount of shredded Gruyère cheese on top of the baguette slices. Place the bowls under a broiler for 2-3 minutes until the cheese is melted and bubbly, being careful not to burn.

    Garnish and Enjoy

    Remove from the oven and let cool slightly. Serve hot and enjoy your delicious French onion soup au gratin!
