Method

Prepare Steak Tartare

    Mix the tartare ingredients

    In a bowl, combine the finely chopped beef tenderloin, egg yolk, horseradish, Dijon mustard, Worcestershire sauce, salt, black pepper, chives, and capers. Mix well until all ingredients are evenly incorporated.

    Chill

    Cover the mixture and refrigerate for about 15 minutes to allow flavors to meld.

Prepare Olive Tapenade

    Blend the tapenade ingredients

    In a food processor, combine black olives, green olives, capers, garlic, olive oil, and lemon juice. Pulse until the mixture is coarsely blended. Adjust seasoning if necessary.

Prepare Gaufrette Chips

    Slice and fry the potatoes

    Using a mandoline slicer, thinly slice the potatoes. Heat vegetable oil in a deep skillet or fryer to 350°F (175°C). Fry the potato slices in batches until golden brown and crispy. Remove and drain on paper towels. Season with salt.

Assembly

    Serve

    On a plate, form a mound of steak tartare in the center. Top with a dollop of olive tapenade. Surround with gaufrette chips for dipping.
