Preparing the Lemon Confit

    In a saucepan, combine sugar and water. Bring to a boil, then add lemon slices. Reduce heat and simmer for about 30 minutes until the lemons are tender and the syrup thickens. Set aside to cool.

Cooking the Salmon

    Preheat the grill or a skillet over medium-high heat. Rub the salmon fillets with olive oil, salt, and pepper. Cook for about 4-5 minutes on each side, or until cooked through and flaky.

Preparing the Spring Vegetables

    In a large skillet, heat olive oil over medium heat. Add asparagus, snap peas, radishes, and baby carrots. Sauté for 5-7 minutes until vibrant and tender but still crisp.

Making the Vinaigrette

    In a small bowl, whisk together minced shallots, red wine vinegar, olive oil, salt, and black pepper until well combined.
