Method
Preparing the Ribeye

Season the Ribeye
Generously season the Prime Aged Ribeye with salt and black pepper on all sides. Let it sit at room temperature for about 30 minutes.

Cook the Ribeye
Preheat your grill or rotisserie to medium-high heat. Cook the ribeye on the grill for approximately 12-15 minutes per side for medium-rare, or until your desired doneness is reached. Use a meat thermometer to check the internal temperature.

Rest the Meat
Once cooked, remove the ribeye from the grill and let it rest for at least 10 minutes before slicing.
Preparing the Leeks

Prepare the Leeks
Trim the root ends and dark green parts of the leeks, then slice them lengthwise and rinse under cold water to remove dirt.

Preparing the Sauce Vert

Blend the Sauce
In a food processor, combine fresh parsley, fresh basil, garlic, capers, lemon juice, olive oil, salt, and black pepper. Blend until smooth. Adjust seasoning if necessary.
Serving

Plate the Dish
Slice the rested ribeye and arrange it on a platter. Top with sautéed leeks and drizzle the sauce vert over the meat. Serve immediately.
