Crust Preparation

Prepare the Crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined. Press this mixture into the bottom of a 9-inch springform pan to form the crust.
Cheesecake Filling Preparation

Make the Filling
In a large bowl, beat the softened cream cheese and granulated sugar together until smooth. Add the crème fraîche, eggs, and Madagascar vanilla extract. Mix until everything is well incorporated and smooth.
Baking

Bake the Cheesecake
Pour the cheesecake filling over the prepared crust in the springform pan. Bake in the preheated oven for about 50-60 minutes, or until the edges are set and the center is slightly jiggly. Remove from the oven and let it cool at room temperature.

Add Apricot Glaze
Once the cheesecake has cooled, spread the apricot preserves over the top of the cheesecake. Chill in the refrigerator for at least 4 hours or overnight before serving.
