    Chill glass

    Place a coupe or rocks glass in the freezer for several minutes or fill it with ice water while you prepare the cocktail so the glass is well chilled.

    Combine ingredients

    In a mixing glass or cocktail shaker filled with plenty of ice, pour 1.5 oz gin, 1 oz Lillet Blanc (or Cocchi Americano), and 1 oz Suze (or other white bitter). If you prefer a slightly drier, more structured drink, add 0.25 oz dry vermouth. Add 1 dash orange bitters if using.

    Stir

    Stir the mixture briskly with a bar spoon for 20–30 seconds (about 15–20 full turns) until the exterior of the mixing glass is well chilled and slightly frosted. This dilutes and chills the cocktail to the proper temperature without overly aerating it.

    Strain

    Discard the ice or water from the chilled serving glass. Fine-strain or double-strain the cocktail from the mixing glass into the chilled coupe or into a rocks glass over one large ice cube, depending on your preference.

    Express the oils of a lemon twist over the surface of the cocktail by holding the twist skin-side down about 3–4 inches above the drink and giving it a quick squeeze, then run the twist around the rim and drop it into the glass as garnish.

    Serve immediately. The White Negroni is best enjoyed cold and freshly made.
