    Halve the avocados lengthwise, remove the pits, and scoop the flesh into a medium mixing bowl. Finely dice the red onion and roma tomato (remove seeds if you want less moisture). Mince the jalapeño and garlic and finely chop the cilantro.

    Mash and season

    Use a fork or potato masher to roughly mash the avocado to your preferred texture (smooth with some chunks is recommended). Immediately add the 2 tablespoons lime juice and 2 teaspoons kosher salt; mix to combine. The acid helps slow browning and brightens flavor.

    Add aromatics

    Fold in the diced red onion, tomato, minced jalapeño, minced garlic, and chopped cilantro. Taste and adjust seasoning: add the remaining 1 teaspoon kosher salt if needed, plus black pepper and the optional 1 teaspoon ground cumin for warmth. If you prefer a silkier mouthfeel, drizzle in 1 teaspoon extra-virgin olive oil and stir gently.

    Rest and finish

    Let the guacamole rest at room temperature for 10 minutes to allow flavors to meld. If not serving immediately, press a piece of plastic wrap directly on the surface to prevent browning and refrigerate for up to 2 hours.

Smoky Sumac Chips

    Prep (if using whole tortillas)

    If using whole small corn tortillas, stack and cut them into wedges (6–8 wedges per tortilla). If using bagged chips, skip this step.

    Toss with oil and spices

    Place chips or tortilla wedges in a large bowl. Drizzle with 2 tablespoons neutral oil and toss to coat evenly. Sprinkle 1 teaspoon smoked paprika, 1 teaspoon ground sumac, and 1 teaspoon fine sea salt over the chips and toss again until evenly seasoned. Taste one chip and adjust salt or sumac level if desired.

    Crisp the chips

    For baked chips: preheat oven to 375°F (190°C). Spread chips in a single layer on a rimmed baking sheet and bake 8–12 minutes, turning once halfway, until crisp and just beginning to brown at the edges. For stovetop: heat a large, dry skillet over medium heat and work in batches, toasting chips 1–2 minutes per side until crisp. For microwave (quick option): arrange chips in a single layer on a microwave-safe plate and cook 45–60 seconds, checking frequently so they don't burn.

    Cool and serve

    Let the chips cool completely on a wire rack or paper towel-lined sheet for 5 minutes to crisp further. Transfer to a serving bowl or plate and serve alongside the guacamole.
