Coconut Water

    Prepare and open coconuts

    Rinse the outside of each young coconut under cool running water to remove dirt. Pat dry. Place one coconut on a stable cutting board. Using a heavy cleaver or a large chef's knife held perpendicular to the board, carefully shave away the top husk until you expose the inner shell, or use the knife tip to make a circular puncture at the coconut's top. If using a cleaver, strike the top of the coconut firmly in a circle until the top can be lifted off. Repeat with the second coconut.

    Extract the water

    Hold the opened coconut over a fine-mesh strainer set atop a bowl or pitcher and pour the coconut water out. If the opening is small, insert a clean straw or pour slowly to avoid spilling. Repeat for the second coconut. Discard any large husk pieces and the shell tops.

    Strain and chill

    Once both coconuts are drained into the bowl/pitcher, pass the liquid through the fine-mesh strainer again (or a cheesecloth) to remove any small bits of shell or membrane. Taste the water. If you prefer it chilled immediately, pour the strained coconut water into a pitcher over ice cubes (add about 1 cup of ice) or refrigerate for at least 20–30 minutes before serving.

    Flavor adjustments and serving

    If desired, add a pinch of sea salt and up to 1 tsp of honey or simple syrup to the chilled coconut water and stir until dissolved to balance flavor. Squeeze in fresh lime wedge(s) to taste (about 1/2 to 1 full lime per 2 coconuts). Add mint leaves to the pitcher and gently bruise them against the rim of a spoon before adding to release aroma. Serve in glasses over additional ice, garnished with a lime wedge and a sprig of mint.

    Notes: Fresh coconut water is best consumed the same day for peak flavor and nutrients. Any leftover coconut water can be stored in a sealed container in the refrigerator for up to 24 hours; shake gently before serving.
