    Blend

    Cut seedless watermelon into cubes and measure 3 cups. Place watermelon cubes in a blender with 2 tablespoons fresh lime juice and 1 teaspoon granulated sugar. Blend until smooth, about 30–45 seconds.

    Strain

    Pour purée through a fine-mesh sieve into a bowl or pitcher, using a spatula to press out as much liquid as possible. Discard pulp or reserve for another use. You should have about 1 to 1¼ cups of bright pink watermelon juice.

    Chill

    Place purée in the refrigerator while you prepare the rest so the cocktail is cold.

Mojito Base

    Muddle Mint and Sugar

    In a sturdy mixing glass or cocktail shaker, add 12 fresh mint leaves and 2 teaspoons granulated sugar (or 2 tsp simple syrup if you prefer). Gently muddle the mint with a muddler or the back of a spoon to release oils—do not shred the leaves.

    Add Lime and Rum

    Add 1 ounce fresh lime juice and 2 ounces white rum to the muddled mint. Fill the shaker with a small amount of crushed ice and give a quick shake (5–7 seconds) to lightly chill and combine flavors.

To Assemble

    Combine

    Fill a highball or Collins glass with crushed ice (about 1 cup). Strain the mojito base from the shaker into the glass, then add 3 to 4 ounces of the chilled watermelon purée (adjust to taste). Stir gently to combine.

    Top and Garnish

    Top the glass with 4 ounces chilled club soda, stirring once to integrate. Garnish with a small watermelon wedge on the rim and a fresh mint sprig. Optionally, slap the mint between your palms first to release aroma before garnishing.

    Serve immediately with a straw. Taste and adjust sweetness or acidity: add ½ teaspoon sugar or ½ tbs lime juice if needed.
