Prepare beef
Remove the beef from refrigeration 45–60 minutes before cooking so it reaches near room temperature. Pat dry thoroughly with paper towels to ensure a clean sear.

Season
Evenly sprinkle the 2 tsp fine sea salt over both sides of the beef, pressing lightly so salt adheres. Grind 1 tsp fresh black pepper over the surfaces. Keep seasoning simple to showcase the meat's intense sweetness.

Sear
Heat a heavy skillet (cast-iron preferred) over high heat until smoking point is nearly reached. Add 2 tbs neutral oil and swirl to coat. Place the beef in the pan; sear without moving for 2–3 minutes until a deep brown crust forms. Flip and sear the other side 2–3 minutes. For a 1 kg roast intended medium-rare slices, after searing all sides, reduce heat to medium and continue cooking briefly so internal temperature reaches 52–55°C (125–131°F) for medium-rare. For individual steaks (~2–3 cm thick), sear 2–3 minutes per side.

Rest
Transfer the beef to a cutting board and loosely tent with foil. Rest for 10–15 minutes (larger roast may require 15–20 minutes). Resting lets juices redistribute and preserves the delicate texture.

Slice and finish
Slice the beef thinly against the grain to emphasize tenderness and 'snowflake' flake. Arrange slices on warm plates.

Make snow dust
In a small dry skillet over low heat, melt 50 g unsalted butter. Add 20 g very finely toasted panko and stir until breadcrumbs are evenly coated and become lightly golden — 1–2 minutes. Remove from heat and stir in 5 g powdered milk and 1 tsp yuzu zest or 1 tsp yuzu kosho (if using) to create a subtly sweet, slightly citrus 'snow' dust. Let cool slightly; it will crisp as it cools.

Dust the beef
Just before serving, very lightly sprinkle the snow dust over the sliced beef to create a delicate powdering reminiscent of snowflakes. Add micro shiso or micro cilantro as a fresh visual and flavor contrast (to taste).

Deglaze
After searing the beef in the skillet, leave any browned fond in the pan. Reduce heat to medium-low and add the minced shallot; cook 1 minute to soften. Pour 60 ml dry white wine or sake into the pan to deglaze, scraping up browned bits with a wooden spoon. Let alcohol reduce by about half (2–3 minutes).

Mount with butter
Lower heat to very low. Whisk in 25 g cold cubed unsalted butter piece by piece to emulsify and gloss the sauce. Taste and add salt only if necessary. Strain sauce through a fine-mesh sieve into a warm sauceboat or small pitcher.

Serve
Spoon a small amount of warm pan jus alongside or lightly over the sliced beef (avoid drowning the powder finish). Serve immediately so the beef remains warm and the snow dust retains delicate texture.
