Matcha Macadamia Syrup

Toast nuts
Place chopped macadamia nuts in a small dry skillet over medium heat. Toast, stirring frequently, until lightly golden and aromatic, about 3–4 minutes. Remove from heat and let cool for 5 minutes.

Bloom matcha
In a small bowl, sift or whisk the matcha powder with 1 tablespoon of the water (taken from the measured 0.5 cups) until it forms a smooth paste with no lumps.

Make syrup
In a small saucepan combine the remaining water (about 7 tablespoons) and sugar. Warm over medium heat, stirring until sugar is fully dissolved and the mixture barely simmers. Add the toasted macadamia nuts and the matcha paste, stirring to incorporate. Reduce heat to low and simmer gently for 4 minutes so the macadamia flavor infuses the syrup. Do not boil hard — you just want a gentle simmer.

Strain and cool
Remove the saucepan from heat. Let the syrup cool for 5–10 minutes, then strain through a fine-mesh sieve or cheesecloth into a clean jar, pressing on the nuts to extract flavors. Discard solids. Let the syrup cool to room temperature, then refrigerate until cold. Yields roughly 6–7 oz (about 3/4 cup) syrup. Use 0.5 oz per cocktail; syrup keeps refrigerated for up to 7 days.

Prepare glass
Chill a rocks glass or coupe by filling with ice or placing in the freezer for a few minutes. If serving on the rocks, use a rocks glass with a large ice cube; if serving up, use a chilled coupe.

Combine ingredients
In a mixing glass filled with plenty of ice, pour 1.5 oz Bombay Sapphire Gin, 1.5 oz Luxardo Bianco, 1 oz white bitter (white Campari or gentian liqueur), and 0.5 oz matcha-macadamia syrup. Stir vigorously for 20–30 seconds until well chilled and properly diluted (mix should feel very cold to the touch).

Strain and finish
If using a rocks glass with ice: place a large ice cube in the glass and strain the stirred cocktail over it. If serving up: double-strain into the chilled coupe to remove micro-ice and any residual solids.

Serve
Serve immediately. The matcha-macadamia syrup should contribute a subtle nutty, vegetal backbone that complements the floral gin and bitter-sweet Luxardo Bianco, creating a pale-green, elegant white negroni variation.
