    Place a coupe or highball glass in the freezer (or fill with ice water) to chill while you prepare the cocktail.

    If you don't have bottled makrut lime juice, finely mince 2 fresh makrut lime leaves and muddle them with the simple syrup, then strain to yield about 1 ounce of fragrant makrut-infused syrup. Alternatively, gently bruise 2 leaves to release oils and steep briefly in 1 oz hot water, then cool and strain.

Build & Shake

    Combine base ingredients

    In a cocktail shaker, add the makrut lime juice, fresh lime juice, simple syrup, gin, and dry vermouth.

    Fill the shaker with ice (about 3/4 full) and shake vigorously for 12–15 seconds until well chilled and slightly diluted.

    Double-strain the contents of the shaker into the chilled glass (if using coupe) or a rocks glass filled with fresh ice to remove any leaf bits from the makrut infusion.

Top & Finish

    Top the cocktail with 2.5 oz chilled soda water. If you prefer more sparkle and a hint of wine character, replace 1 oz of the soda water with 1 oz prosecco and gently stir once to integrate (avoid vigorous stirring to keep bubbles).

    Garnish by gently slapping one makrut lime leaf between your palms to release its aroma, then float it on top of the drink. Add a thin lime wheel or a twist on the rim.
