Sushi Rice & Seasoning

Rinse and cook rice
Place 2 cups short-grain sushi rice in a fine-mesh sieve and rinse under cold water, stirring with your hand, until the runoff is clear (about 5–7 minutes). Drain 10 minutes. Combine rinsed rice and 2.25 cups water in a rice cooker or heavy saucepan. If using a saucepan, bring to a gentle boil, reduce to low, cover and simmer 15 minutes; remove from heat and let rest, covered, for 10 minutes.

Make sushi vinegar
While rice cooks, whisk together 4 tbs rice vinegar, 2 tbs sugar and 1 tsp fine sea salt until sugar dissolves. Warm slightly if needed to dissolve fully, then cool to room temperature.

Season rice
Transfer hot cooked rice to a large wooden or nonreactive bowl. Pour vinegar mixture evenly over rice. Using a rice paddle or spatula, fold the rice gently—cutting and fanning motion—to coat without crushing grains. Fan or circulate air over rice while folding until glossy and near room temperature (about 10 minutes). Cover with a damp towel to keep soft while you prepare toppings.

Slice proteins
Using a very sharp, wet slicing knife, slice each protein into nigiri-sized pieces: about 2.5–3 inches long, 1–1.5 inches wide and 1/8–1/4 inch thick for tuna, salmon and yellowtail. For scallops, halve horizontally if large or leave whole if small; for shrimp, butterfly and press flat. Keep fish chilled on a tray covered with plastic wrap until assembling.

Optional quick cures and finishes
If desired, brush scallops and scallop halves with a light blend of 1 tsp mirin + 1/2 tsp yuzu/lemon and a light sprinkle of salt. For certain pieces (like yellowtail), you can briefly torch the surface for a touch of char; keep torching minimal so fish remains mostly raw. For shrimp, warm gently in simmering water for 30–45 seconds if not pre-cooked, then chill.

Prepare finishing sauces
Combine 3 tbs light soy sauce with 1 tbs mirin and 1 tsp yuzu/lemon in a small bowl to use for brushing some pieces. Whisk 1 tsp toasted sesame oil into 2 tbs unagi sauce (or sweet soy glaze) to add depth for others. Place wasabi in a small bowl to allow diners to add more if desired.

Garnishes
Have thinly sliced scallions, microgreens or shiso leaves, furikake and pickled ginger available to top or serve alongside the nigiri.

Prepare your workstation: a small bowl of cold water, a pinch (about 1 tsp) kosher salt, the seasoned rice, sliced proteins and finishing sauces arranged nearby.

Shape nigiri rice
Wet your hands in the cold water and lightly salt one palm (this prevents rice sticking). Take about 2 tablespoons (approx. 30 g) of seasoned rice and gently form into an oblong ball using your palms and fingertips. Do not compress too tightly—rice should hold shape but remain tender. Repeat to make 12 rice portions (yield: about 12 pieces). Keep formed rice covered with a damp towel.

Assemble nigiri
For each piece: place one slice of fish or protein on your non-dominant palm, smear a very small amount of wasabi (a pea-sized dab) onto the underside of the fish (optional), then press a rice ball beneath the fish, using your thumb and forefinger to gently pinch sides so fish maps to rice. Smooth edges with your fingers so the fish lies flat and rice shape is tidy. If using scallop or shrimp, lay the protein over rice and press gently to adhere.

Finish with sauces and garnishes
Lightly brush selected pieces with the soy-mirin-yuzu mix using a soft brush (tuna, yellowtail). Brush other pieces (salmon or scallop) sparingly with the unagi-sesame mix for a sweet-savory finish. Sprinkle a few pieces with furikake or sliced scallion. Place a microgreen or shiso leaf atop one or two pieces for color. Serve pickled ginger and extra soy sauce on the side.

Optional torching
If you torched any slices (see optional earlier step), do this immediately before serving—briefly pass a kitchen torch over the fish until lightly charred (2–4 seconds) to add aroma.

Arrange the 12 pieces (approx. 2 pieces per protein type) on a platter. Serve immediately at cool room temperature with soy sauce, additional wasabi, and pickled ginger. Nigiri is best eaten within 30 minutes of assembly for optimal texture and temperature.
