Waffle Batter

Preheat
Preheat your Belgian waffle iron according to the manufacturer's instructions so it reaches cooking temperature while you finish the batter.

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and fine salt until evenly combined.

In a separate bowl or large measuring cup, lightly beat the eggs. Add the whole milk, melted butter, and vanilla extract and whisk until combined.

Make a well in the center of the dry ingredients and pour in the wet mixture. Stir gently with a spatula or whisk just until combined. Small lumps are fine — do not overmix or the waffles will be dense.

Let the batter rest for 5–10 minutes at room temperature. This allows the flour to hydrate and the baking powder to begin working, producing lighter waffles.

Cooking Waffles

When the waffle iron is hot, pour an appropriate amount of batter onto the center of the lower plate (typically about 1/2 to 3/4 cup for a standard Belgian waffle iron; adjust to your iron's size). Do not spread the batter — the top plate will spread it for you.

Close the lid and cook according to your waffle iron's instructions, usually 3–5 minutes, until waffles are deep golden brown and crisp. Avoid opening early to check, which can cause sticking and deflation.

Carefully remove the waffle using a non-metal utensil and transfer to a wire rack set over a baking sheet to keep them crisp while you cook additional waffles. If you prefer to serve warm immediately, stack on a plate and serve right away.

While waffles are cooking or just before serving, prepare the berries: rinse gently under cold water, drain well, hull and quarter strawberries if using, and pat dry. Combine berries in a bowl and toss gently to mix.

Place cooked waffles on serving plates. Top each waffle with a generous handful of fresh mixed berries.

Drizzle pure maple syrup over the waffles and berries to taste (about 1–2 tablespoons per waffle). If desired, add a small pat of unsalted butter and dust lightly with powdered sugar.
