    Chill glass

    Place a coupe or rocks glass in the freezer or fill with ice water to chill while you build the cocktail.

    If using fresh citrus, juice the grapefruit, orange and lemon and measure the required amounts. If using egg white, separate and keep the white ready.

Build & Shake

    Combine base ingredients

    In a cocktail shaker add 2 TBS gin (approx. 1.0–1.25 oz), 2 oz fresh grapefruit juice, 1 oz fresh orange juice, 0.5 oz fresh lemon juice, 0.5 oz simple syrup, and 0.5 oz apricot liqueur.

    Add egg white (optional)

    If you want a silky froth, add one egg white to the shaker. This also helps integrate the citrus and aerate the drink.

    Dry shake

    Without ice, seal the shaker and shake vigorously for 15–25 seconds to emulsify the egg white and thoroughly mix the juices and liqueur.

    Wet shake

    Add plenty of ice to the shaker, then shake hard for 10–15 seconds until the shaker is cold to the touch and well-chilled.

Strain & Finish

    Double strain

    Discard the ice or chilled water from your glass. Double strain the cocktail through a fine mesh strainer into the chilled coupe (or over fresh ice in a rocks glass) to remove small ice shards and any solids.

    Add effervescence & bitters

    Top the strained cocktail with about 2 oz dry sparkling water or club soda to give a bright, athletic lift. Add 2 dashes of Angostura bitters on top — the bitters will create a slight color contrast and aromatic finish when lightly swirled.

    Garnish & serve

    Express a grapefruit or orange twist over the drink to release oils, rub the rim with the twist if desired, then drop it in or perch it on the rim. Serve immediately.

Notes & Variations

    To reduce sweetness or make the cocktail more tart, cut simple syrup to 0.25 oz and increase lemon juice to 0.75 oz. For a lower-alcohol version, reduce gin to 1 TBS and increase sparkling water to 3–4 oz.

    If avoiding raw egg, skip egg white; instead, shake extra hard and for longer during the wet shake to create some aeration, or use 0.5 oz aquafaba as a vegan substitute.
