Prepare the Secret Sauce

    Make the Catalina Sauce

    In a small bowl, combine mayonnaise, ketchup, sweet pickle relish, Dijon mustard, and garlic powder. Mix until smooth and set aside.

Caramelize the Onions

    Cook the Onions

    Slice the large onion thinly. In a skillet, melt butter over medium heat. Add the onions and a pinch of salt, cooking them slowly for about 15-20 minutes until they are golden brown and caramelized. Stir occasionally to prevent sticking.

Prepare the Burger Patties

    Form the Patties

    Divide the Linz American Wagyu beef into two equal portions of 4 oz each. Gently form them into balls, being careful not to overwork the meat. Season both sides with kosher salt and black pepper.

    Smash the Patties

    Heat a skillet or griddle over high heat until very hot. Place the meat balls in the skillet and immediately smash them down with a spatula to about 1/2 inch thick. Cook for about 2-3 minutes until browned, then flip the patties.

    Add Cheese

    After flipping, place a slice of sharp white cheddar cheese on each patty. Cook for an additional 1-2 minutes until the cheese is melted and the patties are cooked to your desired doneness.

Assemble the Burgers

    Build the Burger

    Toast the burger buns lightly on the grill or in a toaster. On the bottom half of each bun, place a lettuce leaf, followed by the smashed wagyu patty with melted cheddar, a generous portion of caramelized onions, a slice of tomato, and pickles. Drizzle with the Catalina secret sauce. Top with the other half of the bun.
